Our policy is that the best tasting meat comes from animals that have been looked after and have enjoyed a happy life, having grown slowly and naturally.
Our own rare breed beef and lamb is indicative of our ethical views. At all times, the animals are treated with kindness and respect and reared in a stress-free environment. Fear and stress in an animal is well known to affect the tenderness and flavour of the resulting meat, often making it tough with a taint. Our animals do not go through markets and are not shipped long distances in lorries to the abattoir. These welfare friendly methods produce the most tender and flavourful meat and, very importantly, all our beef and lamb carcases are properly hung to enhance the succulence and flavour – which is why our customers come back time and time again!
We hang all of our meat on site to guarantee that what we sell to the customer is the very best. To ensure maximum tenderness and flavour, we hang our hind-quarters of beef for four weeks and our fore-quarter meat for twelve days. Our lambs are hung between 5 and 7 days, resulting in tender, succulent meat.
We are also able to offer from time to time, lovely large joints of mutton from sheep that are around two years old. The larger joints, cooked slowly, give a full, rich flavour and melt-in-the-mouth tenderness. Mutton is enjoying a much deserved comeback and we’ll often have tasters available in the shop.
All the different breeds that we offer have their own particular flavours and textures. Some customers don’t just ask for lamb – they may discover that they prefer, perhaps, the sweet and gamey meat of the Portland, the full, rich flavour of the Jacob or the milder sweet flavour of the Woodland. That’s the big advantage of buying from the farm where the meat is produced – you can be confident that we know its history from birth to plate.
We have a number of local suppliers that provide us with wonderful free-range pork, chicken and game. All are available in a number of different cuts but again, if you have a preference, just pop in and ask. Or you can call ahead and if we haven’t got what you’re looking for, then you can be sure that it will be in for next time you want it.
