Along with the purchase of the farm in 2015, Thomas Clayton & Sophie Hughes also purchased a beautiful herd of home grown Longhorn cattle. With this herd already being grown on the farm, it only felt natural to acquire them alongside the stunning countryside this farm has to offer. Grass fed on the farms oldest pasture fields, these cattle have had a superb life growing in their natural surroundings and being cared for by stockmen Iain Stephens and Colo Galarza.

With their knowledge and care for these animals, they have managed to produce a wonderful finished product which not only produces some of the most flavoursome meat of all the breeds but also provides a magical vista for visitors of the farm to be able to see exactly where their meat comes from.

As members of the Longhorn Cattle Society, we pride ourselves on keeping up to date with the latest herds and breeding programs for our stock improvements.

The Longhorn is beyond equal as a suckler cow. Its combination of qualities in terms of milk, calving ease, longevity, docility, length and leanness of body is unrivalled by any other breed.

It has stood the test of time but does not rest on its laurels. Responding to market trends the breed continues to adapt and improve, so much so that the Longhorn is now superbly placed to meet the challenges of Quality Beef Production in the 21st Century.

Whilst their horns may, to some, give an opposite impression Longhorns are noted for their exceptional docility, an extremely important consideration when establishing a herd. This quality, combined with their attractive appearance will engender greater stockmanship in cattleman and farmer alike.

Depth over the pins allows greater length from hooks to pins without incurring calving difficulties. Indeed the great overall length generally associated with the Longhorn is correlated with a rapid growth rate and lean carcase.

It is a well-established fact that intramuscular fat or “marbling” within meat is largely responsible for succulence, tenderness and flavour – the hallmark of beef with superior eating quality.

Unlike many rival breeds, which require the laying down of excessive amounts of external fat before the formation of intramuscular fat can take place, a properly finished Longhorn carcase will benefit from “marbling” without such excess external fat cover.

Today’s Longhorns are clean, modern cattle, well capable of producing lean beef with superior eating qualities to suit today’s discerning market.

Such beef can command a premium price, which when coupled with the economic costs associated with its production; place the Longhorn in pole position for Quality Beef Production in the 21st Century!

Our Longhorn meat is renowned for its texture, flavour and succulence across the whole range of cuts and joints – due to the ‘marbling’ in the lean meat without excess external fat. This is particularly enhanced by the slow growing process with no forcing to finish at an early age, as in some continental breeds.

Due to our cattle enjoying a stress free and relaxed environment, they are allowed to mature slowly therefore producing an even better quality, more marbled meat.

The reputation of the Longhorn meat is outstanding throughout history and although it is a rare breed, the meat still does justice to the British reputation for quality.

Our meat is hung between four to five weeks and can be butchered to order depending upon the customer’s request.

Even Heston Blumenthal chose Longhorn beef on his TV programme ‘Perfection’, and he quoted it as the ‘best beef available in Britain’.

Along with supplying farm shops and butcheries with our meat, it is available to buy direct from Christmas Hill Farm, just email us or call us on 01842 862068 before coming over to check the stock availability. Simply call ahead for prices or pop in and view the array of different cuts available.
